Ingredients:

5 lbs of salmon; rinsed clean
1/4 tsp of salt

3 pcs of lemons (fresh); sliced
1/2 c of dill (fresh)
1/2 c of parsley (sprigs, fresh)
2 Tbsps of melted butter

For the Creamy Dill-Wine Sauce:
2 Tbsps of butter (unsalted)
2 Tbsps of flour (all purpose)
1/2 c of milk
1/2 c of wine (dry white)
1/2 c of cream (whipping)
3/4 tsp of salt
1/4 tsp of pepper
1/4 c of dill (fresh); chopped

Instructions:

Let the salmon sit for half an hour then cut the head off and rinse with (cold) water and pat it dry. Sprinkle salt & pepper on its inside & out. Line a large foil on a cooking sheet then arrange 1/3 the slices of lemon onto the center lengthwise. Place salmon on top.

Stuff salmon with parsley, dill, and 1/3 the slices of lemon. Brush the butter onto salmon and place the remaining slices of lemons on top. Crumple the foil up, enough for holding its juices, don’t include salmon in covering.

Bake inside the oven at 450 degrees F for 45 mins till flaked easily with a fork, or 12-15 mins per inch thick. Take out from the oven then tent it with a foil.

Allow to stand, about 5 mins. Remove quarter cup of juices in the pan and set on the side.

(For the Sauce)
Melt the butter inside a saucepan above moderate heat. Add flour then cook for one min; stir constantly. Gradually add milk, cream, wine, pepper, and salt, while whisking constantly; continue to whisk for five mins till thick and boiling. Add the saved juice from pan and lower down the heat; let it simmer, about five mins. Keep it warm above gentle heat then once salmon is ready, add the dill and stir thoroughly.

(To serve)
Discard the slices of lemon above salmon. Cut salmon lengthwise through the bone, Gently remove the skin.
Cut parallel with backbone along the midline. Cut it crosswise, to 4 inch wide sections. Lift the sections and transfer onto warmed plates. Slowly lift the bones and discard them. Repeat the carving and serve at once with the sauce.

Instructions:

Instructions:

Instructions:

Melt a tablespoon of butter on a skillet then cook the salmon for 10 mins of every inch thick. Turn salmon twice then season salt & pepper. Once done, transfer on a warm plate. Add dill and (sour) cream on the skillet; turn off the heat till warmed for some mins. Pour the sauce onto the salmon. Serve at once with fresh fruits, new potatoes, and (green) beans.

Potato Crepes With Scallops Salmon & Asparagus Recipe

Ingredients:

1/2 lb of asparagus (fresh)
1 Tbsp of wine (dry white)
1/2 tsp of cornstarch
1 pc of egg white (large)
1/8 tsp of pepper (white)
1/4 lb of scallops; cleaned and cut to 1/4 inch discs
1/4 lb of salmon (fillet); remove bones and cut to 1/4-inch thick rectangles
Potato crepes
1-1/2 c of oil (peanut oil)
1 tsp of ginger (fresh); chopped finely
1 Tbsp of onion (green); chopped finely
1/8 tsp of pepper (white)
1/2 c of stock (chicken)
2 tsps of soy sauce
1/2 tsp of vinegar (rice)
1/4 tsp of sugar (refined)
1/2 tsp of cornstarch (dissolved with 1 tsp of water)

Instructions:

Cut asparagus to 1-1/2 inch with diagonal cut then slice its tip off diagonally. Roll asparagus in a quarter-turn then cut; repeat slicing till reaching their tough base. Do not include the base, discard them.

Dissolve cornstarch inside a bowl with wine. Add white of egg and white pepper; beat them gently. Add scallops then salmon; toss them gently till coated well.

Preheat oven at 175 degrees F. Set two plates to make them warm. Make the crepes then place one per plate and keep them warm inside preheated oven.

Drain salmon & scallops. Place an iron-cast above medium-high heat till smoky. Add oil and after half a min, cook salmon with scallops; gently stir them, separating each piece. Cook till salmon changes color.

Carefully pour contents onto a sieve. Place wok back above heat then stir-fry onion and ginger till fragrant then add asparagus with pepper; stir fry till it starts browning. Add stock, vinegar, sugar, and soy then cover. Cook for 2-3 mins till asparagus becomes tender-crisp.

Uncover then place back salmon & scallop. Add mixture of cornstarch then stir thoroughly. Cook till sauce becomes slightly thick. Adjust seasonings if needed. Divide salmon, scallops, sauce, & asparagus over crepes then serve at once.

Asian Salmon Burgers Recipe

Ingredients:

1 pc of cucumber (large, about 1 lb); sliced very thinly
1 Tbsp of vinegar (cider)
1-1/2 tsps of sugar (refined)
1/4 tsp of hot pepper flakes (red, dried)
1 pc of egg white (large)
1/2 tsp of gingerroot (fresh); peeled and grated
1 Tbsp of soy sauce
3/4 lb of salmon fillet (skinless); cut to 1/4-inch pieces
1/2 c of fine breadcrumbs (fresh)
2 pcs of scallions (fresh); chopped finely
1 tsp of mustard (seeds)
1 tsp of oil (vegetable oil)
4 pcs of lettuce
10 oz of pumpernickel (firm, 8 slices)

Instructions:

Combine cucumber, vinegar, dried pepper flake, salt, and sugar inside a mixing bowl; gently toss them.

Combine white of egg, soy, and ginger root on a separate bowl then whisk thoroughly till blended well; add salmon, scallions, breadcrumbs, salt, and mustard.

Stir thoroughly and place one-third cup of the mixture on a processor; process till pureed then return onto the bowl. Stir till combined thoroughly then form to four patties, about 3/4 inch thick; drain the cucumber.

Heat the oil on a nonstick skillet above medium-high heat then cook the patties for 2 mins per side till golden. Continue cooking above medium heat, covered, for another 5 mins.

Arrange the lettuce onto four slices of pumpernickel then top the burgers and (pickled) cucumber. Cover each with the slice of pumpernickel.

4 oz of salmon (smoked)
8 oz of mackerel (fillets, smoked); skinned and boned
1 pkg of cream cheese (light, 8 oz)

Instructions:

Combine salmon, mackerel, cream cheese, lemon juice, horseradish, and pepper inside the processor; process till pureed smoothly. Transfer on an airtight container and cover. Place inside the refrigerator till chilled.

Ingredients:

6 pcs of salmon (fresh steaks, 1-inch)
1/2 tsp of salt
1/8 tsp of pepper
1 pc of orange
1 Tbsps of butter (unsalted)
Slices of orange (for garnish)

Instructions:

Season salt & pepper onto steaks. Combine butter with the juice from half of orange; blend thoroughly. Slice the other half thinly; set on the side. Brush half of orange/butter mixture onto steaks then arrange them onto greased broiler pan.

Place under the broiler, 3 to 4 inches away from the heat; broil for 5 mins till browned. Turn then brush the remaining orange/butter mixture; continue broiling for 5 mins. Garnish the slices of orange.

Charcoal Grilled Salmon With Spicy Black Bean Recipe

Ingredients:

1 pc of carrot (small)
1/2 pc of celery (rib)
1/2 lb of beans (black); soaked
2 oz of chopped ham
2 pcs of peppers (jalapeno); stemmed then cut to dices
1 pc of garlic clove
1 pc of bay leaf
1 pc of onion (small); chopped
3 pcs of thyme sprigs
2 pcs of garlic cloves; chopped finely
1/2 tsp of pepper flakes (hot)
Juice from 1/2 pc of lemon
Juice from 1 pc of lemon
1/3 c of oil (olive oil)
2 Tbsps of basil (fresh); chopped
5 c of water
24 oz of salmon (steaks)

Instructions:

Combine onion, celery, carrot, ham, garlic, jalapeno, water, and (bay) leaf tied with sprigs of thyme inside a saucepan. Let it simmer for 2 hrs till tender; adding water when needed so as keeping beans well covered.

Take out garlic, herbs, celery, and carrot then drain the rest of liquid. Combine beans, finely chopped garlic, juice from half lemon, and hot (pepper) flakes; toss them well and set on the side.

Combine oil, basil, and juice from one lemon; pour onto the steaks then place inside the refrigerator for one hr.

Gill salmon for 4 to 5 mins on each side above medium-high flame. Baste them every min with their marinade. Serve the steaks with beans.

Mark’s Salmon Spread Recipe

Ingredients:

1 pkg of cream cheese (8 oz)
1 pc of celery (stalk); chopped finely
1/2 c of walnuts; crushed
1/2 c of onion (green); chopped finely
1/2 tsp of cayenne
1/2 tsp of coriander (ground)
1 pc of cucumber; peeled and sliced thinly
1 pkg of crackers (Wheatsworth)
Juice from 1 pc of lemon (fresh, not bottled)
Freshly ground pepper (black)
24 pcs of salmon (smoked); sliced into 3×1 inch
1 pc of dill bunch (fresh)

Instructions:

Combine cheese, walnuts, celery, onion, cayenne, coriander, and juice of lemon; mix thoroughly till blended well.

Place one teaspoon of mixture onto an end of salmon strip then sprinkle freshly ground pepper; roll it up like a jellyroll. Do the same to all. Cover plastic then place inside the refrigerator till chilled.

Arrange the crackers or toasted bread on a serving platter. Place one slice of cucumber onto each then place one piece of rolled salmon over. Garnish them with dill.

Manicotti with Salmon Sauce Recipe

Ingredients:

4 pcs of salmon (fillets, 8 oz); steamed
1/2 c of condensed soup (cream of celery)
1/3 c of plain yogurt (skim milk)
2 Tbsps of parsley; chopped
4 pcs of noodles (Manicotti)
2 Tbsps of butter (unsalted)
1/2 c of cooked spinach; chopped
1/2 tsp of basil
1 pc of garlic clove (medium); crushed
1/3 c of Cottage Cheese; (skim milk)
Salt & Pepper (to taste)

Instructions:

Remove bones in salmon then break to chunks and gently mix with yogurt, parsley, and soup. Cook the noodles as stated in its package instructions. Saute garlic and onion with butter then add the seasonings. Mix with (Cottage) cheese and spinach; heat.

Stuff each noodle with stuffing, about one-third cup. Arrange them onto a buttered baking dish. Coat them with the sauce/salmon mixture. Cover then bake inside the oven 350 degrees F for twenty mins.

2 Tbsps of pepper (green); cut to dices

1 tsp of dill (dried); chopped
1 tsp of horseradish

Instructions:

Combine mayonnaise, pimiento, and pepper inside the blender; blend gently till smooth. Transfer on a bowl then add salmon, lemon juice, vinegar, horseradish, and dill. Mix thoroughly till blended well and place inside the refrigerator till chilled.

Ingredients:

1 tsp of juice (lemon)
1 tsp of sherry (vermouth, or wine)
1 tsp of butter (unsalted)
1/16 tsp of dill

Instructions:

Spray PAM on a large foil. Place the salmon onto the center then add juice and sherry. Close the foil and bake at 350 degrees F for 10 minutes. Open then add dill and butter. Close again and bake for another 10 minutes.

Ingredients:

6 oz of dry pasta (penne, macaroni, shells, or rotini)
14-3/4 oz of salmon (Alaska); drained and flaked
2 Tbps of dressing (French)
1 pc of onion bunch (green); sliced thinly
1 pc of bell pepper (red); sliced thinly
3 Tbsps of chopped cilantro (or parsley)
2 Tbsps of mayonnaise (light)
1 pc of lime (fresh); juiced zested finely
1 Tbsp of paste (tomato)
1/2 c of sour cream
3 pcs of avocados (ripe); diced
Lettuce leaves
Paprika

Instructions:

Cook pasta as stated in its package instructions. Drain well then add the dressing; toss well and let it cool. Combine pasta, salmon, onions, cilantro, and red pepper.

Combine lime zest, juice, mayonnaise, paste, and (sour) cream; whisk thoroughly till blended well then add onto the mixture of pasta.

Toss them well and season salt & pepper then cover. Place inside the refrigerator till chilled well. Add avocados; toss gently and serve at once over lettuce. Sprinkle little paprika.

Ingredients:

1 Tbsp of cream cheese (light)
1 oz of salmon (smoked); sliced thinly

1 pc of bagel (about 1 oz, mini); halved horizontally and toasted
2 pcs of tomato slices
2 pcs of onion slices (red)

Instructions:

Spread the (cream) cheese onto one cut-side of the bagel then top it with salmon, capers, onion slices, and tomato slices. Cover with the other one-half bagel.

4 pcs of salmon (steaks); rinsed and pat dry
1/4 tsp of pepper
1-1/2 tsps of salt

1 pc of large onion (Bermuda); sliced

Instructions:

Season salt & pepper onto the steaks then sprinkle oil and juice. Spread the slices of onion over the steaks; let it stand for one hr. Discard the onion then arrange the steaks on a (broiling) pan. Place under the broiler and broil at 3 inches away from the heat; broil till browned onto each side, turning them once.

Ingredients:

3 oz of unsweetened chocolate; broken to pieces
1 c of sugar (refined)
1 c of cream (whipping)
1 tsp of corn syrup (light)
2 pcs of egg yolks; beaten slightly
1 tsp of vanilla extract

Instructions:

Combine chocolate, cream, syrup, and sugar inside a saucepan above moderate heat; stir constantly till melted.

Lower down the heat and let it simmer for 10 mins, undisturbed. Gradually add two tablespoons of the mixture onto yolks while constantly stirring; place the yolk mixture onto the pan.

Continue cooking above gentle heat for 3-4 mins; stir constantly till thick and smooth. Add vanilla and stir thoroughly. Let it cool.

Ingredients:

8 oz of canned salmon (red sockeye)
1-1/2 Tbsps of chopped onion
3/4 c of cream cheese
Juice of 1/2 pc of lime

Instructions:

Combine salmon, onion, cream cheese, and lime juice; mix thoroughly till blended well. Place inside the refrigerator for three hours. Serve.

Kingly Smoked Salmon Recipe

Ingredients:

Salmon (Pacific king); butterflied at tail section

For the Rub:
1/4 c of dill (dried)
1/4 c of sugar (brown)
2 tsps of salt (kosher)
2 tsps of freshly ground pepper (black)

Optional:
1 c of vinegar (cider)
1/4 c of canola oil (or corn oil)

Instructions:

Combine dill, sugar, salt, and freshly ground pepper inside a bowl; mix them well. Open salmon then massage with two-thirds of rub; save remaining one-thirds of rub. Fold back salmon then place inside a (plastic) bag. Place inside refrigerator overnight.

Prepare grill at 180-200 degrees F. Take salmon out and allow to rest for half an hour. Combine saved rub, vinegar, and canola oil inside a saucepan; allow to warm above gentle heat. Set on the side to be used for basting.

Transfer salmon on the grill, skin facing down, don’t place directly on the heat. Grill for 50-60 mins, while basting every ten and thirty mins. Serve at once.

Linguica Crusted Roasted Salmon Cedar Plank Recipe

Ingredients:

3 lbs salmon (side)
2 Tbsps of oil (olive oil)
Essence
8 oz of linguica (or any favorite sausage); chopped finely
1/2 c of breadcrumbs (to bind)
2 Tbsps of grated lemon zests
2 Tbsps of grated orange zests
2 Tbsps of chopped chives

Instructions:

Preheat the oven (400 degrees F). Season Essence and one tablespoon of oil on salmon. Heat remaining one tablespoon of oil inside a pan; sear salmon at 1 to 2 mins per side. Take out from pan then place it on (cedar) plank.

Cook sausage inside a pan for 2 to 3 mins then add just enough breadcrumbs, binding them. Add the two zests and stir thoroughly. Season salt & pepper. Place mixture over the salmon and pack firmly.

Roast it for 8 to 10 mins for medium-rare. Place the plank onto a platter then garnish Essence and chives. Serve at once.

Ingredients:

8 ounces of pasta
1/2 c of cream (heavy)
4 ounces of salmon (cooked); cubed
4 ounces of cheese (Fontina); cut to dices
Pepper

Instructions:

Cook the pasta as stated in its package instructions. Heat cream, pepper, and salmon inside the saucepan till heated. Once pasta is ‘al dente’, drain then return onto the pot. Add the cheese then add the sauce; toss them well.

Let it heat through while tossing constantly. Serve at once.

4 pcs of salmon (steaks, 6-8 oz)
2 Tbsps of juice (lemon)

Salmon Loaf Recipe

Ingredients:

14 ounces of salmon (canned); drained then flaked
1/2 cup of breadcrumbs (fresh)
6 pieces of medium mushrooms (fresh); chopped
1 piece of beaten egg
1/2 piece of onion (medium); chopped
1 Tablespoon of juice (lemon)
1 teaspoon of lemon zest; grated
1/2 teaspoon of seasoning (Cajun, or crushed dried rosemary)
1/8 teaspoon of pepper

Instructions:

Spray vegetable oil on a small (loaf) pan. Combine salmon, breadcrumbs, mushrooms, onion, egg, lemon juice, lemon zest, seasoning, and pepper; mix thoroughly till blended well.

Transfer mixture on the coated pan then bake inside the oven at 375 degrees F for forty minutes.
