New Mexico Style Barbecued Salmon Recipe
Ingredients:
4 pcs of salmon fillets (each about 6 oz)
New-mexico sauce (barbecue)
Instructions:
Brush (barbecue) sauce onto the fillets. Place inside the refrigerator for two hrs. Grill for 2-3 mins per side till slightly browned. Baste sauce again then serve at once.

BBQ Salmon Recipe
Ingredients:
4 lbs of salmon; rinsed clean
1 pc of lime (fresh)
1/2 c of butter (unsalted)
Salt and Pepper
2 pcs of onions (medium); sliced
Instructions:
Place the clean salmon onto a large foil then stuff salt, pepper, butter, and onions onto salmon.
Rub butter onto outside part of salmon then squeeze juice of lime evenly on it. Sprinkle more pepper and salt then close foil wrapping salmon tight, adding more foil if necessary.
Grill for 25-30 mins and turn; grill again for another 15 mins. Serve at once.

Bar-B-Q: Smoke-Grilled Salmon Recipe
Ingredients:
1 tsp of lime zest; grated
1/4 c of juice (lime)
1 Tbsp of oil (vegetable oil)
1 tsp of mustard (Dijon)
1/8 tsp of pepper
4 pcs of salmon (steaks, 1 inch thick)
1/3 c of sesame seeds (toasted)
Instructions:
Combine juice, zest, mustard, pepper, and oil; mix well then add the steaks. Turn till coated then cover; marinate for half an hour, while turning frequently.
Remove the steaks, save the marinade, then sprinkle sesame seeds. Place onto greased grill above moderate heat then add the soaked (wood) chips.
Cook for 16 to 20 mins, covered; turn and baste with the saved marinade halfway of cooking.

Grilled Salmon & Cheddar Sandwiches Recipe
Ingredients:
1 lb of salmon (canned)
10 oz of cheese (mild Cheddar); sliced equally to 4 pieces
1/4 c of mayonnaise (real)
1 Tbsp of grated onion
1 Tbsp of juice (lemon)
Instructions:
Combine salmon, juice, mayonnaise, and onion; mix thoroughly. Spread onto a bread then place one cheese slice on top. Cover with another bread like a sandwich.
Brush butter generously onto each side of sandwich. Grill till cheese melts and sandwich has browned on each side; turning once. Serve at once.

Nanaimo Salmon & Mushroom Kebabs Recipe
Ingredients:
2 lbs of salmon (fresh); cubed to 1 inch
1/2 c of oil (salad)
3 Tbsps of juice (lemon)
36 pcs of mushrooms (large); stemmed and sliced
1/2 c of butter (unsalted)
2 Tbsps of breadcrumbs (fine)
1 pc of lemon (fresh); cut to wedges
1/8 tsp of salt
1/8 tsp of pepper
1/8 tsp of parsley
Parsley (fresh, for garnish)
Salt & Pepper (to taste)
Instructions:
Preheat the oven, 450 degrees F. Combine (salad) oil, juice, parsley, salt, & pepper inside a (glass) bowl; mix thoroughly. Add the salmon then place inside the refrigerator; marinate for one hr. Drain the salmon on a colander for ten mins.
Melt the butter on a pan then add mushrooms and salmon; toss them well. Secure onto skewers, alternating with mushrooms and salmon. Sprinkle lightly with crumbs till evenly distributed. Season salt & pepper.
Arrange the kebabs onto the rack on baking pan. Bake inside the oven 450 degrees F for fifteen mins or till done. Take them out from the oven then sprinkle chopped parsley and serve immediately with wedges of lemon.

Charcoal Grilled Salmon With Spicy Black Bean Recipe
Ingredients:
1 pc of carrot (small)
1/2 pc of celery (rib)
1/2 lb of beans (black); soaked
2 oz of chopped ham
2 pcs of peppers (jalapeno); stemmed then cut to dices
1 pc of garlic clove
1 pc of bay leaf
1 pc of onion (small); chopped
3 pcs of thyme sprigs
2 pcs of garlic cloves; chopped finely
1/2 tsp of pepper flakes (hot)
Juice from 1/2 pc of lemon
Juice from 1 pc of lemon
1/3 c of oil (olive oil)
2 Tbsps of basil (fresh); chopped
5 c of water
24 oz of salmon (steaks)
Instructions:
Combine onion, celery, carrot, ham, garlic, jalapeno, water, and (bay) leaf tied with sprigs of thyme inside a saucepan. Let it simmer for 2 hrs till tender; adding water when needed so as keeping beans well covered.
Take out garlic, herbs, celery, and carrot then drain the rest of liquid. Combine beans, finely chopped garlic, juice from half lemon, and hot (pepper) flakes; toss them well and set on the side.
Combine oil, basil, and juice from one lemon; pour onto the steaks then place inside the refrigerator for one hr.
Gill salmon for 4 to 5 mins on each side above medium-high flame. Baste them every min with their marinade. Serve the steaks with beans.

Bob’s Barbequed Salmon Recipe
Ingredients:
4 to 6 oz of salmon (steaks)
For the Sauce:
3 Tbsps of butter; melted
1 Tbsp of juice (lemon)
1 Tbsp of vinegar (white wine)
1/4 tsp of lemon zest; grated
1/4 tsp of salt (garlic)
1/4 tsp of salt
1/16 tsp of hot sauce (pepper, Tabasco)
Instructions:
Combine melted butter, lemon juice, vinegar, lemon zest, garlic salt, salt, and hot sauce; stir thoroughly. Brush generously onto the steaks till coated on all sides.
Barbecue the steaks onto a well-greased grill above (hot) coals. Tent foil above the steaks and barbecue for 6 to 8 mins on each side. Baste occasionally and turn them once.

Grilled Salmon Recipe
Ingredients:
6 pcs of salmon (steaks, medium)
1/3 c of oil (olive oil)
1/2 c of parsley; chopped
1/4 tsp of dill weed (dried)
1 c of fine breadcrumbs (dry)
1 tsp of salt
1/4 c of softened butter (or margarine)
4 pcs of garlic cloves; crushed
Instructions:
Place the salmon onto a greased (broiler) pan. Place oil, parsley, garlic, salt, and dill inside the blender; blend till smooth.
Add breadcrumbs and stir thoroughly; set on the side. Brush butter onto steaks then broil at 4-inches away from the heat for 8 mins.
Gently brush two tablespoons of the mixture of garlic onto each steak. Broil them again for 1-2 mins till slightly brown.
