Salmon Croquettes Recipe

Ingredients:

15 oz of salmon (canned)
1 pc of potato (large); cubed
1 pc of egg (large)
1 pc of onion (large); cubed
1 c of matzo meal

Instructions:

Place the onion and the potato inside the processor; process till grated then add in egg.

Mix thoroughly and transfer on a glass bowl. Add salmon then mix thoroughly. Gradually add matzo meal while mixing constantly till mixture becomes firm.

Shape into patties and dip them on matzo till coated well. Let them stand inside the refrigerator for 30-60 mins till set. Fry in oil till browned, turning once, about ten mins per side. Drain them onto paper towel(s).

Lower-Fat: Sesame Salmon Dip Recipe

Ingredients:

1 c of yogurt (plain, 2%PRCTG%)
7-1/2 oz of salmon (canned); drained and discard skin
1/4 c of onions (green); chopped finely
1/4 c of celery; chopped finely
2 pcs of garlic cloves; chopped finely
2 Tbsps of sesame seeds (toasted)
1/16 tsp of hot sauce (pepper)
1/8 tsp of salt
1/8 tsp of pepper

Instructions:

Spoon the yogurt onto a sieve, lined with paper towel and placed over a bowl. Place inside the refrigerator for 8 hrs till thick and has reduced into half a cup.

Mash the salmon inside a bowl then add yogurt, celery, onions, garlic, hot sauce, seeds, salt, & pepper; stir thoroughly. Cover then place inside the refrigerator for 4-24 hrs. Use as spread for bread or cracker.

Basic Best Salmon Loaf Recipe


Basic Best Salmon Loaf Recipe

Ingredients:

15-1/2 oz of canned salmon (Alaska); drained, but save 2 Tbsps and flaked
2 c of breadcrumbs (soft)
1/3 c of onions; minced finely
1/4 c of milk (whole)
2 pcs of eggs (large)
2 Tbsps of parsley; chopped
1 Tbsp of juice (lemon)
1/4 tsp of dill weed
1/16 tsp of pepper (black)

Instructions:

Combine salmon, saved liquid, breadcrumbs, onions, milk, eggs, parsley, juice, dill weed, and pepper; mix thoroughly. Transfer on a greased 8.5×4.5×2.5 inch (loaf) pan. Place inside the oven and bake for forty-five mins, 350 degrees F.

Lucy’s Salmon Soup Recipe

Ingredients:

4 Tbsps of butter (unsalted)
1 c of onion; chopped
1/4 c of celery; chopped
1 c of diced potatoes
1/4 tsp of pepper (white)
1-1/4 tsps of thyme
1/4 tsp of dill weed
2 Tbsps of flour
1/8 oz of canned tomatoes (stewed)
3 c of milk
7-3/4 oz of salmon (canned)
2 Tbsps of parsley
1 c of grated cheese (Monterey Jack)

Instructions:

Melt two tablespoons of butter on a saucepan; saute onions and celery. Add potatoes and cover with enough amount of water; let it simmer till potatoes have softened.

Melt the remaining butter and add two tablespoons of flour; blend thoroughly till the roux has formed. Add the roux and milk onto the saucepan with potatoes.

Cook above moderate heat; stir constantly till thickened. Add salmon, tomatoes, and seasonings; heat till steamy, without boiling. Add the cheese and serve at once.

Cheesy Salmon Supper Recipe

Ingredients:

15.5 oz of salmon (canned)
1 Tbsp of juice (lemon)
2 pcs of beaten eggs
1 c of oats (rolled)
1 c of grated cheese
1/4 c of diced onion
1/2 c of diced celery
1/2 c of grated carrots
1/2 tsp of salt
1/8 tsp of pepper
1/2 tsp of dried parsley flakes
8 oz of canned soup (cream of mushroom)
3/4 c of milk (or 1 c of half-and-half)

Instructions:

Combine salmon, lemon juice, eggs, oats, cheese, onion, celery, carrots, salt, pepper, and parsley flakes; mix thoroughly. Transfer on a nonstick loaf pan. Bake inside the oven at 350 degrees F for 40-50 mins. Take out from the pan. Mix milk and soup; heat then pour onto loaf.

Alaska Salmon A La Rainier Recipe

Ingredients:

7-1/2 oz of canned salmon (Alaska); drained but save liquid, and flaked
1/2 c of onions; chopped
1/2 c of celery; chopped
1 pc of garlic clove; chopped finely
1 c of potatoes; cut to dices
1 c of carrots; cut to dices
2 c of broth (chicken, low sodium)
1/4 tsp of pepper (black)
1/2 tsp of thyme
1/2 c of broccoli; chopped
2 Tbsps of margarine
10 oz of corn (kernels, frozen); thawed
Finely chopped parsley
13 oz of evaporated milk

Instructions:

Saute celery, garlic, and onions with margarine on a pan. Add the potatoes, carrots, broth, saved liquid from salmon, and the seasonings; let it simmer for 20 mins, covered, till almost soft.

Add the broccoli then cook for 5 mins. Add milk, corn, and salmon; cook till heated through then sprinkle over parsley.

Microwave Salmon Stuffed Potatoes Recipe


Microwave Salmon Stuffed Potatoes Recipe

Ingredients:

7-1/2 oz of canned salmon (Alaska); drained and flaked
4 pcs of baking potatoes (each at 7 oz)
1 c of shredded cheese (Monterey Jack)
1/4 c of milk (whole)
1 pc of egg (beaten)
2 Tbsps of margarine
2 Tbsps of onions; minced
2 Tbsps of chiles (green); diced
1/8 tsp of pepper (black)

Instructions:

Pierce the potato with fork then place inside the microwave and cook for 20 mins at high setting till tender; turn once. Cut off the top on each and scoop the inside; leave a 1/4-inch thick shell then set on the side.

Combine half cup of cheese, salmon, pulp of potato, milk, egg, margarine, onions, chiles, and pepper; blend thoroughly and spoon onto the shells.

Place them inside the microwave and cook for 4-5 mins at a high setting. Sprinkle the rest of cheese then cook for 45 secs till cheese melts.

Black Bean & Salmon Appetizer Recipe

Ingredients:

8 pcs of tortillas (corn)
16 oz of canned corn beans (black); rinsed then drained
7 oz of canned salmon (pink, with bones); drained and flaked
2 Tbsps of oil (safflower oil)
1/4 c juice (freshly squeezed lime)
1/4 c of parsley (fresh); chopped
1/2 tsp of onion (powder)
1/2 tsp of salt (celery)
3/4 tsp of cumin (ground)
3/4 tsp of garlic; chopped finely
1/2 tsp of grated lime zests
1/4 tsp of dried pepper flakes (red)
1/4 tsp of chili pepper

Instructions:

Preheat the oven (350 degrees F). Cut the tortillas to triangles then toast for 5 mins inside the oven till crisp. Combine salmon and beans; add oil, juice, parsley, onion, salt, cumin, garlic, zests, pepper flakes, and chili pepper.

Mix thoroughly and place inside the refrigerator till chilled. Serve together with the toasted tortillas.

Macaroni Salmon Loaf Recipe


Macaroni Salmon Loaf Recipe

Ingredients:

4 oz of elbow macaroni (cooked al dente)
1 lb of canned salmon (pink or red)
2 Tbsps of onion; chopped finely
1 Tbsp of parsley; chopped
1/16 tsp of pepper
1 c of coarse breadcrumbs (whole wheat)
3 pcs of egg whites
3/4 c of milk (skim)
2 pcs of garlic cloves; chopped finely
1 tsp of dill (dried)
1/4 tsp of rosemary (dried)

Instructions:

Preheat the oven at 350 degrees F. Spray PAM on a 9×5-inch pan. Combine macaroni, salmon, onion, parsley, pepper, breadcrumbs, egg whites, milk, garlic, dill, and rosemary; mix thoroughly. Transfer on the pan then bake inside preheated oven for 35 to 40 mins.

Variation:
Combine half cup of (Marinara) sauce and two tablespoons of low fat buttermilk; heat the mixture and use this as the sauce.

Peas ‘n’ Salmon Loaf Recipe

Ingredients:

31 oz of salmon (canned); drained
2 pcs of beaten eggs
1 Tbsp of chopped onion
2 tsps of juice (lemon)
1/2 tsp of salt
1/2 c of fine crumbs (cracker)
8.5 oz of peas (canned); drained
1/4 c of catsup (tomato)

Instructions:

Combine salmon, onion, eggs, salt, crumbs, and juice inside a bowl; mix them well then gently fold the peas into the mixture.

Transfer onto greased 1-1/2 quart (loaf) pan and bake inside preheated oven at 350 degrees F for half an hour. Spread catsup over the loaf and bake for another 5 mins.

Microwave Salmon Ring Recipe


Microwave Salmon Ring Recipe

Ingredients:

15 ozs of salmon (canned); drained and flaked
1 pc of pc of egg; beaten lightly
1 c of bread crumbs
1/4 c of sour cream (or whipping cream)
1/2 tsp of curry (powder)
1 pc of onion (small); chopped finely
1 tsp of salt
1/4 tsp of pepper (black)
1 pc of lemon; juiced and zested

For the sauce:
2 tsps of margarine (unsalted)
2 tsps of flour; sifted
1 c of milk (whole)
3 tsp of chopped dill

Instructions:

Combine salmon, pc of egg, crumbs, sour cream, curry, onion, salt, pepper, lemon juice, and zest; mix them well.

Transfer on a microwave (ring) pan then cover it w/ waxed paper. Cook for 6 mins at a high setting. Let it stand for 5 mins before unmolding.

(Sauce)
Melt the margarine inside the microwave for half a min at a high setting. Add the flour and stir thoroughly; cook for 30-60 secs at a high setting. little by little add milk, while stirring constantly.

Add pepper and dill; cook it at a high setting till thick, stirring the mixture every 1-2 mins.
