Poached Salmon With Green Onion Sauce Recipe
Ingredients:
1 lb of salmon (fresh fillets)
2-1/2 c of water
2 tsps of salt
1/2 tsp of pepper
3 pcs of chopped onion (green)
1 Tbsp of ginger (fresh); chopped
1-1/2 Tbsps of oil (peanut oil)
2 tsps of sesame oil (toasted)
Instructions:
Rub salt & pepper on salmon. Boil water inside a skillet then add salmon; simmer it for 2 to 3 mins. Turn heat off and cover the skillet tightly. Let it stand for eight mins. Combine salt, onion, and ginger inside a bowl. Combine oils inside a pan; heat till smoky.
Take out salmon from skillet then arrange it onto a warm platter then scatter over the onion. Pour over the (hot) oil then serve immediately.

Baked Fresh Salmon Steak Recipe
Ingredients:
3 lbs of salmon (steak); halved
1/4 lb of mushrooms; chopped
1 pc of onion (medium); chopped finely
2 Tbsps of parsley; chopped finely
1/4 tsp of tarragon
Salt & Pepper
2 Tbsps of butter
1/2 c of sherry
1/3 c of fine breadcrumbs
Instructions:
Soak the lid of a (clay) cooker. Lay the salmon pieces inside the cooker then sprinkle parsley, mushrooms, and onion. Season salt & pepper then dot butter on top. Pour over the sherry and cover. Place inside the oven then turn on at 425 degrees F. Sprinkle breadcrumbs on top after half an hour then continue to bake for another half an hour.

Bourbon Marinated Grilled Salmon Recipe
Ingredients:
3 lbs of salmon (fresh); skinned and boned
Oil (vegetable oil)
2 c of soy sauce
2 c of bourbon
1/3 c of ginger (fresh)
1/3 c of pepper (black)
1 tsp of chili (powder)
1 Tbsp of garlic; chopped finely
1-1/2 oz of oil (sesame oil)
Instructions:
Cover oil on the salmon. Combine bourbon, soy sauce, ginger, pepper, chili powder, garlic, and sesame oil then mix thoroughly and marinate with the salmon for over a night. Grill above a mesquite till done.

Mushroom Filled With Salmon Filet Recipe
Ingredients:
1 pc of fresh salmon (steak)
For the Filling:
Mushrooms (Inoki); julienned
1 pc of carrot (fresh); julienned
1 pc of mushroom (shiitake); julienned
1 pc of celery (fresh); julienned
Salt & Pepper, to taste
Oil (for frying)
For the Braising Sauce:
1 pc of lemon grass (white part only); minced
2 Tbsps of shallot; chopped finely
2 Tbsps of wine (rice)
2 Tbsps of fish sauce
1 tsp of sesame oil
2 Tbsps of broth (chicken)
1 tsp of sugar (refined)
Cooked rice
Cilantro (for garnish)
Instructions:
Cut salmon into half then slice each horizontally but not completely, make it look like an opened bun. Combine lemon grass, shallot, wine, fish sauce, sesame oil, broth, and sugar inside a bowl; stir thoroughly then set on the side. Season salt & pepper onto salmon and add some fillings. Close the sandwich then set on the side.
Heat little (peanut) oil inside a pan above medium-high heat till smoky. Cook salmon for 1 min per side; turning once. Once browned, pour in the sauce then cover; braise above moderate heat for 2-3 mins till salmon has cooked through. Transfer salmon onto a plate then serve them with rice. Garnish cilantro and drizzle over the pan drippings.

Red Sockeye Salmon Special Recipe
Ingredients:
3/4 c of flaked salmon (fresh)
or
8 oz of salmon (canned); drained well and flaked
1/2 tsp of onion (white); diced finely
1-1/2 tsps of chopped dill (fresh, or 1/2 tsp crushed dried)
1/4 c of cream (whipping)
1/2 c of mayonnaise
1 Tbsp of juice (lemon)
Instructions:
Remove bones and skin from salmon. Combine salmon, onion, dill, and juice; mix them well. Add cream and mayonnaise; blend thoroughly. Cover then place inside the refrigerator till chilled. Serve as a dip for fresh vegetables or crackers.

Baked Fresh Salmon Recipe
Ingredients:
3 lbs of salmon; rinsed and pat dry
1 tsp of black pepper
1/2 tsp of thyme
1 tsp of salt
3 Tbsps of butter (unsalted)
1-1/2 c of light cream
3 pcs of parsley sprigs
3 pcs of onions; sliced
1 pc of garlic clove (medium); cut to quarter
2 pcs of cucumber (fresh); peeled and julienned
1 pc of bay leaf
Instructions:
Combine thyme, salt, and pepper; rub onto salmon evenly. Melt the unsalted butter on the baking glass dish and add the salmon; coat butter on the salmon. Add cream, garlic, onion, (bay) leaf, and parsley; arrange the strips of cucumber around salmon. Cover and bake for forty mins till the center bone is easy to remove. Discard garlic, (bay) leaf, and parsley. Serve at once.
