Lazy Salmon Cakes Recipe
Ingredients:
1/2 c of potato (mashed)
1 Tbsp of juice (lemon)
1/2 tsp of dried lemon zest (or orange)
1/2 tsp of dill (dried or 4 Tbsps fresh)
1/2 tsp of dried cilantro (or fresh parsley)
1/4 pc of onion (medium); chopped
7-1/2 oz of canned salmon (skinless, boneless)
1 pc of egg
Instructions:
Combine cooled mashed potato, juice, onion, seasonings, and salmon; blend them well then add the egg and mix thoroughly. Shape to four patties.
Heat pan above moderate heat then spray canola oil on it. Fry them for five mins per side till golden. Serve together with fresh lemon wedges.

Pasilo Chile-Pepper-Rubbed-Salmon Over Chipotle Recipe
Ingredients:
2 pcs of dried chiles (Anaheim, seedless); softened with boiling water and minced finely
1/4 c of juice (pineapple)
1/4 c of juice (grapefruit)
1/4 c of juice (lime)
1/4 c of juice (orange)
1 Tbsp of cilantro (fresh); chopped
4 Tbsps of butter; softened
3 pcs of canned peppers (chipotle); rinsed then seeded
1-1/4 lbs of mashed potatoes
2 pcs of dried pepper (Pasillo, seedless); ground finely
4 pcs of salmon (fillets)
Salt
Instructions:
Combine Anaheim and all the juices inside the saucepan; let it reduce above moderate heat till only a quarter cup has remained. Let it cool for a while then add butter and cilantro. Whisk thoroughly and place inside the refrigerator.
Puree the chipotle then fold onto the hot potatoes; keep them warm. Rub pasillo onto the salmon and lightly sprinkle salt. Place under a broiler and broil at moderate heat for 3-4 mins per side till cooked through. Place half cup of potatoes and one salmon onto each serving plate. Top it with the chile-citrus glaze. Serve at once.

Baked Salmon With Herb Sauce Recipe
Ingredients:
1-1/2 lbs of salmon (fillet); cut to 4 serving pieces
1 Tbsp of butter (unsalted)
Salt & Pepper (to taste)
1/2 c of mayonnaise
1 Tbsp of parsley
1/2 tsp of dill
Lemon; sliced to wedges
Onion (green); chopped finely
Instructions:
Place the fillet on a baking glass dish; pierce them and dot butter on the top. Cover them with a plastic wrapper. Microwave on medium heat for five mins. Combine mayonnaise, onion, dill, and parsley; mix thoroughly and spread over the fillets. Microwave again on medium heat for five to six mins, covered. Garnish lemon and onion.

Oven Salmon Cakes Recipe
Ingredients:
1-1/4 c of crackers (Ritz); crushed coarsely
1 pc of egg; beaten slightly
2 Tbsps of snipped parsley
2 Tbsps of onion (green); sliced
2 Tbsps of milk (whole)
1/8 tsp of pepper (pepper)
1/8 tsp of Worcestershire
16 oz of salmon (canned); drained then flaked
1 c of shredded cheese (Cheddar)
1 Tbsp of butter (unsalted)
Instructions:
Combine three-fourth cup of Ritz crumbs, parsley, egg, onion, pepper, Worcestershire, and milk; mix thoroughly. Add the cheese and salmon; mix thoroughly.
Shape mixture to four patties. Combine remaining Ritz crumbs with butter; mix thoroughly then coat onto patties.
Arrange them on a cooking sheet. Place inside the oven and bake (400 degrees F) for ten mins.

Barbecue Salmon Steaks With Green Ginger Sauce Recipe
Ingredients:
2 Tbsps of soy sauce (light)
1/2 tsp of sugar (refined)
4 pcs of salmon (steaks)
1/2 c of parsley
1/2 c of chives; chopped roughly
2 Tbsps of capers
2 Tbsps of onion; chopped
1/2 c of oil (olive oil)
1 Tbsp of juice (lemon or lime)
1 pc of egg (hard boiled)
Pepper (black, freshly ground)
Instructions:
Combine sugar and soy; mix well and brush onto the steaks. Barbecue them on (solid) plate; turn occasionally till cooked well. Serve at once with the sauce.
(Green Sauce)
Combine parsley, capers, chives, and onions inside the processor; process till chopped finely. Add juice, egg, and oil; process till smooth then season pepper.

Orange Salmon Steaks Recipe
Ingredients:
6 pcs of salmon (fresh steaks, 1-inch)
1/2 tsp of salt
1/8 tsp of pepper
1 pc of orange
1 Tbsps of butter (unsalted)
Slices of orange (for garnish)
Instructions:
Season salt & pepper onto steaks. Combine butter with the juice from half of orange; blend thoroughly. Slice the other half thinly; set on the side. Brush half of orange/butter mixture onto steaks then arrange them onto greased broiler pan.
Place under the broiler, 3 to 4 inches away from the heat; broil for 5 mins till browned. Turn then brush the remaining orange/butter mixture; continue broiling for 5 mins. Garnish the slices of orange.
