Lomi Lomi Salmon Spread Recipe
Ingredients:
1 pkg of cream cheese (8 oz)
1 pkg of salmon (smoked, 3 oz); cut to small pieces
1 tsp of juice (lemon)
1 Tbsp of onion; chopped
1 Tbsp of scallions (top); sliced thinly
Instructions:
Combine (cream) cheese, juice, salmon, and chopped onion; mix thoroughly then sprinkle scallions. Serve on crackers.

Anchovy-Grilled Salmon Steaks Recipe
Ingredients:
4 pcs of salmon (steaks)
Parsley (sprigs)
Lemon; slice to wedges
For the Anchovy Butter:
6 pcs of anchovy (fillets)
2 Tbsps of milk
6 Tbsps of butter (unsalted)
Hot sauce (Tabasco)
Pepper
Instructions:
Preheat grill to medium-high heat then arrange steaks evenly. Place anchovy-butter onto each salmon steak then grill them for four mins. Turn steaks then place anchovy-butter again and grill again for four mins.
Reduce heat then cook again for three mins or less for thinner slices. Serve at once with anchovy-butter on side. Garnish wedges of lemon and parsley.
(For Anchovy Butter)
Soak anchovy with milk then mash till creamy. Add butter, one drop of hot sauce, and pepper; beat thoroughly till creamy. Place inside the refrigerator till chilled well.

Smoked Salmon Canapes Recipe
Ingredients:
8 oz of softened cream cheese
1/2 tsp of lime zest; grated
1/4 tsp of onion (powder)
1-1/2 lbs of jicama (unpeeled)
1/2 tsp of Worcestershire
1 Tbsp of ground pepper (black)
2 oz of salmon (smoked); cut thinly into 36 strips
3 pcs of lime wedges
Instructions:
Combine cream cheese, zest, onion, and Worcestershire inside a bowl then beat moderately till smooth; set on the side. Slice the jicama to quarter inch thick then cut the slices to 18 squares, about 2 inches. Halve each of the squares diagonally, making 36 pieces of triangles, then discard the rest.
Rub lime wedges onto longest length of the triangles. Dip that side onto the pepper. Spoon a teaspoon of the mixture of cream cheese into each of the triangle and top it with one strip of salmon.

Red Sockeye Salmon Special Recipe
Ingredients:
3/4 c of flaked salmon (fresh)
or
8 oz of salmon (canned); drained well and flaked
1/2 tsp of onion (white); diced finely
1-1/2 tsps of chopped dill (fresh, or 1/2 tsp crushed dried)
1/4 c of cream (whipping)
1/2 c of mayonnaise
1 Tbsp of juice (lemon)
Instructions:
Remove bones and skin from salmon. Combine salmon, onion, dill, and juice; mix them well. Add cream and mayonnaise; blend thoroughly. Cover then place inside the refrigerator till chilled. Serve as a dip for fresh vegetables or crackers.

Barbecue Salmon Steaks With Green Ginger Sauce Recipe
Ingredients:
2 Tbsps of soy sauce (light)
1/2 tsp of sugar (refined)
4 pcs of salmon (steaks)
1/2 c of parsley
1/2 c of chives; chopped roughly
2 Tbsps of capers
2 Tbsps of onion; chopped
1/2 c of oil (olive oil)
1 Tbsp of juice (lemon or lime)
1 pc of egg (hard boiled)
Pepper (black, freshly ground)
Instructions:
Combine sugar and soy; mix well and brush onto the steaks. Barbecue them on (solid) plate; turn occasionally till cooked well. Serve at once with the sauce.
(Green Sauce)
Combine parsley, capers, chives, and onions inside the processor; process till chopped finely. Add juice, egg, and oil; process till smooth then season pepper.

Orange Salmon Steaks Recipe
Ingredients:
6 pcs of salmon (fresh steaks, 1-inch)
1/2 tsp of salt
1/8 tsp of pepper
1 pc of orange
1 Tbsps of butter (unsalted)
Slices of orange (for garnish)
Instructions:
Season salt & pepper onto steaks. Combine butter with the juice from half of orange; blend thoroughly. Slice the other half thinly; set on the side. Brush half of orange/butter mixture onto steaks then arrange them onto greased broiler pan.
Place under the broiler, 3 to 4 inches away from the heat; broil for 5 mins till browned. Turn then brush the remaining orange/butter mixture; continue broiling for 5 mins. Garnish the slices of orange.
