Lower-Fat: Sesame Salmon Dip Recipe
Ingredients:
1 c of yogurt (plain, 2%PRCTG%)
7-1/2 oz of salmon (canned); drained and discard skin
1/4 c of onions (green); chopped finely
1/4 c of celery; chopped finely
2 pcs of garlic cloves; chopped finely
2 Tbsps of sesame seeds (toasted)
1/16 tsp of hot sauce (pepper)
1/8 tsp of salt
1/8 tsp of pepper
Instructions:
Spoon the yogurt onto a sieve, lined with paper towel and placed over a bowl. Place inside the refrigerator for 8 hrs till thick and has reduced into half a cup.
Mash the salmon inside a bowl then add yogurt, celery, onions, garlic, hot sauce, seeds, salt, & pepper; stir thoroughly. Cover then place inside the refrigerator for 4-24 hrs. Use as spread for bread or cracker.

Bourbon Marinated Grilled Salmon Recipe
Ingredients:
3 lbs of salmon (fresh); skinned and boned
Oil (vegetable oil)
2 c of soy sauce
2 c of bourbon
1/3 c of ginger (fresh)
1/3 c of pepper (black)
1 tsp of chili (powder)
1 Tbsp of garlic; chopped finely
1-1/2 oz of oil (sesame oil)
Instructions:
Cover oil on the salmon. Combine bourbon, soy sauce, ginger, pepper, chili powder, garlic, and sesame oil then mix thoroughly and marinate with the salmon for over a night. Grill above a mesquite till done.

Mrinal’s Special Yogurt Salmon Recipe
Ingredients:
2 Tbsps of oil (vegetable oil)
4 pcs of cardamom pods
1/2 pc of cinnamon stick
8 pcs of whole peppercorns (black)
8 pcs of cloves (whole)
1 pc of large onions (white); sliced to 1/4-inch thick
1-1/2 c of water
1 tsp of cayenne pepper
1 c of yogurt (low fat)
1 tsp of salt
1 Tbsp of sugar (refined)
1 tsp of turmeric
2 Tbsps of ginger root (fresh); grated
3 lbs of salmon (filleted and deboned); cut to 2-inch pieces
4 pcs of garlic cloves; minced
Instructions:
Heat the oil on a pan above medium-high heat then add cinnamon, cardamom, cloves, and peppercorns.
Once mixture sputters, add ginger and onions; cook till caramelized while stirring occasionally. If the mixture becomes very hot, gradually add little (cold) water.
Reduce the heat into medium. Add water, cayenne, turmeric, garlic, yogurt, sugar, and salt; stir thoroughly. Add salmon then cover; let it simmer above gentle heat till done.

Pot-Roasted Salmon With Olives Recipe
Ingredients:
4 pcs of salmon (cutlets)
Oil (olive oil)
Salt & Pepper (to taste)
4 pcs of carrots (fresh); peeled, trimmed, and cut lengthways to thin strips
6 oz of beans (green); topped and tailed
4 oz of pitted olives (black); chopped roughly
1 pc of lemon (preserved); cut to eight segments
3/4 c of stock
1 Tbsp of parsley; chopped
Instructions:
Brown fish in oil inside a casserole dish; season salt & pepper then set on the side. Add vegetables on the used oil inside the casserole till slightly colored. Add lemon preserve and olives; toss well. Add stock; let it boil.
Reduce heat then lay the fish atop; cover and cook above medium heat, at about 8 mins. Baste twice while cooking. Take out the fish then keep them warm on a dish. Continue to cook the vegetables, uncovered, till softened.
Serve the fish over vegetables. Sprinkle over parsley.

Baked Salmon Rolls Recipe
Ingredients:
2 lbs of salmon; skinned and boned
1/4 c of butter (unsalted)
1/4 c of flour
1/4 tsp of salt
Cayenne pepper (to taste)
1 c of breadcrumbs (buttered)
3/4 c of sliced mushrooms
1 tsp of juice (onion)
1/2 c of cream (light)
1/8 tsp of pepper
Mace (to taste)
4 pcs of mushroom (caps)
For garnish:
Parsley
Lemon wedges
Instructions:
Cut the salmon to strips, about 1/2×1/2×8-inches. Butter eight custard cup then coil the salmon inside. Cook the sliced mushrooms with (onion) juice inside a bain-marie for five mins; add flour, cream, cayenne, mace, salt, and pepper.
Stir them constantly till thick and cooked; pour onto cups. Bake inside the oven at 375 degrees F for twenty-five mins. Drain the juice off from the cups. Unmold them then place on a baking dish and sprinkle over the breadcrumbs. Place buttered cap of mushroom onto each salmon roll. Place under the broiler and broil till browned and done. Serve at once and garnish as desired.

Pasta With Salmon Cream Sauce Recipe
Ingredients:
8 oz of tubular pasta (penne or zita)
2 tsps of butter (or margarine)
2 tsps of minced onion
2 tsps of flour (all purpose)
Pepper (to taste)
1 c of peas
1 c of salmon (red sockeye)
1/4 c of parsley
1/4 c of cheese (Parmesan)
1-1/4 c of milk
Instructions:
Cook the pasta according to its package instructions; drain then return onto the pot. Melt the butter on a saucepan above moderate heat. Saute onion till tender. Add the flour then stir thoroughly; cook it for a while.
Add milk then whisk thoroughly; let it simmer while constantly stirring. Add chunks of salmon with their juices, peas, parsley, pepper, and cheese. Pour the mixture onto the pasta then stir till mixed well. Serve at once.

Asian-Style Salmon Stir-Fry Recipe
Ingredients:
2 Tbsps of vinegar (rice)
3 Tbsps of oyster sauce
1 tsp of soy sauce
2 tsps of ginger; minced
2 pcs of garlic clove; minced
1-1/2 lbs of salmon fillet (skinless); cubed to 3/4-inch
5 tsps of oil
8 oz of bean sprouts
8 oz of snow peas (medium)
1 c of onions (green); sliced
1 pc of bell pepper (red); julienned
1/2 tsp of oil (Asian sesame oil)
1/4 tsp of sugar (refined)
1/8 tsp of pepper
Instructions:
Combine 2 tablespoons (oyster) sauce, vinegar, soy, one garlic, and ginger inside a bowl; season pepper. Add the fillets and turn till coated well. Place inside the refrigerator, covered, for 30 mins.
Heat 2 teaspoons oil on a non-stick skillet above medium-high heat then add the rest of garlic; stir-fry for half a min.
Add bean sprouts, onions, bell pepper, and peas; stir-fry for 2 mins till tender-crisp. Add the rest of (oyster) sauce, Asian oil, pepper, and sugar; stir them well. Take out from the heat then set on the side.
Drain the salmon. Heat the rest of oil on the used skillet. Cook the salmon; stir-fry for 4 mins till done then add the vegetables. Toss them gently and cook till heated through. Serve at once.
