Cipate Au Salmon (Layered Salmon Pie) Recipe
Ingredients:
1/4 lb of pork (salt)
1 lb of salmon steak (or fillets); skinned and cut to thick strips
2 Tbsps of flour (all purpose)
1/4 c of chopped celery
1 Tbsp of onion; chopped finely
1 pc of potato (medium); peeled and sliced
1 pc of 9-inch pastry (for double crust pie)
Instructions:
Spread the pork evenly onto the base of 2-quart baking dish. Dredge the salmon slightly with all purpose flour then arrange on top the pork one-half of floured salmon. Sprinkle one-half of onion, slices of potato, and celery. Season salt & pepper.
Roll one-half of pastry to a little thicker and fit onto the dish. Cover pastry above the layer of potato and cut 2 (large) vents. Through vents, carefully pour the water till at pastry level. Layer the rest of onion, potato, and celery then cover them with the other one-half of pastry.
Cut two (large) vents again and add water till at pastry level. Bake inside preheated oven at 350 degrees F for 1-1/2 hrs until crust becomes golden brown.

Baked Salmon In Foil Recipe
Ingredients:
3-1/2 lbs of salmon
1 pc of lemon (fresh); sliced thinly
Salt & Pepper (to taste)
1 Tbsp of oil (or softened butter)
Instructions:
Line foil on baking pan then grease with butter. Arrange half of lemon slices on foil and place salmon above. Place the remaining lemon slices above salmon.
Generously season salt and pepper then wrap salmon loosely. Bake at 350 degrees F for ten mins on every pound. Take out from oven then allow to stand at about 10 mins before serving.

Baked Salmon Packets Recipe
Ingredients:
4 pcs of salmon (fillets)
4 tsps of butter (unsalted)
8 pcs of thyme (sprigs, fresh)
8 pcs of parsley (sprigs, fresh)
4 pcs of garlic cloves; chopped finely
4 Tbsps of wine (white, dry)
1/2 tsp of salt
1/2 tsp of ground pepper (black)
Instructions:
Preheat the oven (400 degrees F). Place four large foil onto a surface then coat with a vegetable spray. Arrange one fillet onto each foil. Divide parsley, thyme, garlic, wine, salt, and pepper among each fillet. Dot butter onto each, about a teaspoon.
Fold the foil then seal their edges. Arrange them onto a cookie sheet then bake inside preheated oven for 10 to 12 mins. Place salmon packets onto a platter and gently open them. Serve at once.

Salmon Filet Recipe
Ingredients:
4 lbs of salmon (fillet)
Oil
Freshly ground pepper (to taste)
1/2 c of butter (melted)
Instructions:
Rinse the salmon with (cold) water then pat dry. Season pepper and place onto heated (oak) plank, with skin facing down.
Bake inside the oven at 350 degrees F for 25 to 30 mins. Baste (melted) butter while roasting. If preferred to make it more browned, broil for 2 mins.

Basic Best Salmon Loaf Recipe
Ingredients:
15-1/2 oz of canned salmon (Alaska); drained, but save 2 Tbsps and flaked
2 c of breadcrumbs (soft)
1/3 c of onions; minced finely
1/4 c of milk (whole)
2 pcs of eggs (large)
2 Tbsps of parsley; chopped
1 Tbsp of juice (lemon)
1/4 tsp of dill weed
1/16 tsp of pepper (black)
Instructions:
Combine salmon, saved liquid, breadcrumbs, onions, milk, eggs, parsley, juice, dill weed, and pepper; mix thoroughly. Transfer on a greased 8.5×4.5×2.5 inch (loaf) pan. Place inside the oven and bake for forty-five mins, 350 degrees F.

Baked Fresh Salmon Steak Recipe
Ingredients:
3 lbs of salmon (steak); halved
1/4 lb of mushrooms; chopped
1 pc of onion (medium); chopped finely
2 Tbsps of parsley; chopped finely
1/4 tsp of tarragon
Salt & Pepper
2 Tbsps of butter
1/2 c of sherry
1/3 c of fine breadcrumbs
Instructions:
Soak the lid of a (clay) cooker. Lay the salmon pieces inside the cooker then sprinkle parsley, mushrooms, and onion. Season salt & pepper then dot butter on top. Pour over the sherry and cover. Place inside the oven then turn on at 425 degrees F. Sprinkle breadcrumbs on top after half an hour then continue to bake for another half an hour.

Quebec Poached Salmon Recipe
Ingredients:
4 pcs of salmon (steaks)
1 Tbsp of salad oil
1 Tbsp of salt
1 pc of onion (small); quartered
4 pcs of parsley (sprigs)
6 pcs of peppercorns; crushed
Zest from 1/2 pc of lemon
Sauce Verte (Green Sauce):
1/2 c of scallion tops (or chives)
1/2 c of pepper (green)
1/2 c of spinach (uncooked)
1/4 c of parsley
2 Tbsps of juice (lemon)
1 c of mayonnaise
Juice from 1 pc of lemon
Instructions:
Spread oil on a (baking) dish. Arrange the steaks inside then add juice, zest, salt, peppercorn, and onion; cover them with (hot) water. Cover then poach inside the oven at 325 degrees F for 10 to 12 mins. Let it cool and drain thoroughly then peel off their skin.
Transfer them on a platter and cover the sauce on them completely. Serve together with (cucumber) salad.
(Sauce Verte)
Place vegetables inside the blender; blend till chopped coarsely. Add juice then blend till smooth. Add mayonnaise then blend thoroughly.

Mona’s Salmon & Corn Casserole Recipe
Ingredients:
2 pcs of eggs (large)
1 tsp of onion (instant minced)
1/2 c of half-and-half
1/8 tsp of pepper
12 oz of canned corn (whole kernel)
7-3/4 oz of salmon (canned); drained
3 oz of shredded cheese (Cheddar)
Instructions:
Beat the eggs on a bowl then add half-and-half, onion, pepper, corn, and salmon; mix thoroughly. Pour onto a greased 1-1/2 quart baking dish then sprinkle cheese. Bake inside the preheated oven at 350 degrees F for 45-50 mins till firm.

Oven Salmon Cakes Recipe
Ingredients:
1-1/4 c of crackers (Ritz); crushed coarsely
1 pc of egg; beaten slightly
2 Tbsps of snipped parsley
2 Tbsps of onion (green); sliced
2 Tbsps of milk (whole)
1/8 tsp of pepper (pepper)
1/8 tsp of Worcestershire
16 oz of salmon (canned); drained then flaked
1 c of shredded cheese (Cheddar)
1 Tbsp of butter (unsalted)
Instructions:
Combine three-fourth cup of Ritz crumbs, parsley, egg, onion, pepper, Worcestershire, and milk; mix thoroughly. Add the cheese and salmon; mix thoroughly.
Shape mixture to four patties. Combine remaining Ritz crumbs with butter; mix thoroughly then coat onto patties.
Arrange them on a cooking sheet. Place inside the oven and bake (400 degrees F) for ten mins.

Oven Barbequed Salmon Recipe
Ingredients:
1 pc of small salmon (sockeye, 4-5 lbs); remove head and tail
1 pc of lemon (fresh); sliced
Bacon strips
1/2 c of karo syrup (light)
1 pc of onion (medium); sliced
1 c of khup
1/2 tsp of salt
1/2 tsp of pepper (black)
1/2 tsp of garlic (powder)
Instructions:
Place half the salmon onto a very large foil inside a (baking) pan, with skin facing down. Add a layer of lemon, bacon, and onion. Combine khup and syrup; our half onto salmon. Place the other half of salmon with flesh facing down.
Pour over remaining sauce and seal it with foil. Bake inside the oven,400 degrees F, for 30 to 40 mins, without over baking. Serve at once.

Oven Poached Salmon Recipe
Ingredients:
1 tsp of juice (lemon)
1 tsp of sherry (vermouth, or wine)
1 tsp of butter (unsalted)
1/16 tsp of dill
1 lb of salmon (fillets)
Instructions:
Spray PAM on a large foil. Place the salmon onto the center then add juice and sherry. Close the foil and bake at 350 degrees F for 10 minutes. Open then add dill and butter. Close again and bake for another 10 minutes.
