All-American Salmon Saute With Mushroom Sauce Recipe
Ingredients:
14-1/2 oz of canned broth (chicken, low sodium)
6 c of mushrooms; sliced
2 Tbsps of oil (olive oil)
2 pcs of garlic cloves; chopped finely
Pepper (freshly ground, to taste)
1/2 c of non-fat yogurt (plain)
2 tsps of cornstarch
4 pcs of steaks (salmon, 6 oz each)
Instructions:
Boil the broth inside a saucepan above medium heat till reduced to a cup then set on the side. Saute the mushrooms with oil on the skillet above moderately-high heat for 5 mins till golden.
Lower down the heat into medium then add the garlic and saute for 1-2 mins while stirring; season pepper. Slowly add the cornstarch and yogurt onto broth then whisk thoroughly till blended well.
Add the mixture of yogurt onto the mushrooms and let it boil while constantly stirring till thick. Take out from the heat then keep it warm on the side.
Season salt & pepper on the salmon then saute on slightly oiled nonstick pan above moderately-high heat for 10 mins for every inch thick; turning once.
Arrange the steaks on the platter with the sauce. Serve at once.

Broiled Salmon Steak With French Dressing Recipe
Ingredients:
4 pcs of salmon (steaks, each at 1/3-1/2 lb)
French Dressing
2 Tbsps of butter (melted or canola oil)

Bernaise sauce
For the French Dressing:

Ingredients:
1/2 c of cilantro (leaves); chopped finely
1 pc of garlic clove (large); chopped finely
2 Tbsps of juice (lime)

4 pcs of salmon (steaks,3/4 inch thick)
Instructions:
Combine garlic, juice, cilantro, salt, and oil inside a bowl; mix thoroughly and save two tablespoons of the mixture.

Ingredients:
4 pcs of salmon (steaks, 3/4 inch thick); rinsed and pat dry
1 tsp of butter (unsalted)

1/2 tsp of tarragon

Instructions:

Ingredients:
4 c of water
1 pc of lemon (fresh); sliced
1 pc of carrot (fresh); sliced
1 pc of celery (stalk); sliced

Instructions:

Ingredients:
2 pcs of salmon (steak, 8 oz)
2 tsps of oil (cooking oil)
1 Tbsp of butter (or margarine)

1/2 c of half-and-half cream (light)
1 pc of egg yolk (large); beaten
2 Tbsps of wine (dry white)

Instructions:
Preheat 6-1/2 inch microwave-safe dish for three mins at a high setting. Add oil and swirl till coated well.
Place the steaks inside and cover. Cook at a high setting for half a min. then turn and cook at a medium setting for three mins.

Add half the mixture onto the yolk and stir thoroughly; add onto the mixture of cream. Microwave again at a medium setting for a min, while stirring on ever fifteen secs.
Stir thoroughly until mixture becomes smooth. Add wine and stir thoroughly.

Ingredients:
4 pcs of salmon (steaks)
1 Tbsp of salad oil
1 Tbsp of salt
1 pc of onion (small); quartered
4 pcs of parsley (sprigs)

Zest from 1/2 pc of lemon
Sauce Verte (Green Sauce):
1/2 c of scallion tops (or chives)
1/2 c of pepper (green)

Ingredients:
1 tsp of salt (fine)
4 pcs of peppercorns (black)
3 c of water
3 pcs of parsley (sprigs)

For the Hollandaise Sauce:
3 pcs of egg yolk (large)

Instructions:
Prepare “Hollandaise Sauce”. Heat water, slices of lemon, onion, (bay) leaf, parsley, salt, and peppercorns on a skillet till boiling.

Ingredients:
2/3 lb of potatoes (medium); cut to 1-inch chunks

1/3 c of soy sauce
