Bourbon-Marinated Smoked Salmon Recipe
Ingredients:
1-1/2 lbs of salmon (fresh); skinned then boned
Oil (vegetable oil)
1 c of soy sauce
1 c of bourbon
2-2/3 Tbsps of ginger (fresh)
2-2/3 Tbsps of pepper (black)
1/2 tsp of chili (powder)
1-1/2 tsps of garlic; chopped finely
3/4 oz of oil (sesame oil)
Instructions:
Cover oil on the salmon. Combine bourbon, soy sauce, ginger, pepper, chili powder, garlic, and sesame oil then mix thoroughly and marinate with the salmon for six hrs or for over a night. Grill above a mesquite till done.

Penne Ala Vodka & Smoked Salmon Recipe
Ingredients:
12 oz pf pasta (penne)
2 Tbsps of oil (olive oil)
1 pc of shallot (whole); sliced thinly
4 pcs of whole tomatoes (Roma); seeded then chopped
2/3 c of cream (whipping)
1/8 tsp of nutmeg (ground)
2 Tbsps of chopped dill (dried or 1/2 tsp dried)
1/3 c of vodka
6 oz of salmon (smoked); cut to strips
Pepper (white)
Fresh sprig of dill
Instructions:
Cook the pasta according to package directions; drain. Heat the oil on a pan above moderately low heat. Saute the shallot for 3 mins while stirring occasionally till tender and not browned. Add tomatoes and stir well then cover; let it simmer, about 5 mins.
Add nutmeg, dill, vodka, and cream; let it boil above high heat. Let it boil, about one min. Add the cooked pasta then mix gently till coated well. Take out from the heat then add the salmon; toss gently.
Season pepper then garnish dill.

Ingredients:
1 pkg of cream cheese (8 oz)
1 pkg of salmon (smoked, 3 oz); cut to small pieces
1 tsp of juice (lemon)
1 Tbsp of onion; chopped
1 Tbsp of scallions (top); sliced thinly
Instructions:
Combine (cream) cheese, juice, salmon, and chopped onion; mix thoroughly then sprinkle scallions. Serve on crackers.

Low-Cal: Double Salmon Spread Recipe
Ingredients:
5 oz of tofu (firm silken)
3-3/4 oz of canned salmon (sockeye)
3 oz of salmon (smoked)
2 Tbsps of chopped dill (fresh)
2 Tbsps of juice (lemon)
1 Tbsp of chopped onion (green)
1 Tbsp of mayonnaise (light)
1/2 tsp of horseradish
1/8 tsp of pepper
Instructions:
Place the tofu on a sieve; let it drain, about 15 mins and discard the liquid. Drain the salmon and discard the skin then mash the bones.
Combine drained tofu, salmons, juice, dill, onion, horseradish, pepper, and mayonnaise inside the processor; process till smooth.
Transfer onto a bowl and cover. Place inside the refrigerator. Consume within 48 hours.

Black Pepper Angel Hair With Smoked Salmon Recipe
Ingredients:
For the Sauce:
4 c of cream (heavy)
1 c of juice (clam)
1 c of wine (white, dry)
6 pcs of garlic cloves (whole); peeled
2 tsps of whole peppercorns (black)
2 Tbsps of dill weed
1 Tbsp of vinegar (champagne)
3/4 c of grated cheese (Parmesan)
16 oz of pasta (angel hair)
2 tsps of salt
Black pepper
For the Topping:
8 oz of salmon (smoked)
8 oz of cream (heavy)
1 c of sour cream (dairy)
4 pcs of dill weed sprigs (fresh)
Instructions:
Place the four cups of cream on a sauce pot; let it simmer gently till reduced into half. Combine (clam) juice, garlic, wine, peppercorns, dill, vinegar, and salt on another pot; let it boil till reduced into half.
Strain the mixture and discard peppercorns and garlic; add the mixture onto the cream then set on the side.
Whip eight ounces of cream till medium peaks; add (sour) cream then whip till blended well. Cook the pasta as stated on its package instructions. Drain then rinse with (cold) water.
Heat the wine/cream sauce till boiling and add the Parmesan; whisk thoroughly till blended well. Add the cooked pasta then toss well till evenly coated.
Divide them between four plates and top 2 ounces of salmon, cream/sour cream sauce, and dill sprig.

Smoked Salmon Canapes Recipe
Ingredients:
8 oz of softened cream cheese
1/2 tsp of lime zest; grated
1/4 tsp of onion (powder)
1-1/2 lbs of jicama (unpeeled)
1/2 tsp of Worcestershire
1 Tbsp of ground pepper (black)
2 oz of salmon (smoked); cut thinly into 36 strips
3 pcs of lime wedges
Instructions:
Combine cream cheese, zest, onion, and Worcestershire inside a bowl then beat moderately till smooth; set on the side. Slice the jicama to quarter inch thick then cut the slices to 18 squares, about 2 inches. Halve each of the squares diagonally, making 36 pieces of triangles, then discard the rest.

Ingredients:
1 pkg of cream cheese (8 oz)
1 pc of celery (stalk); chopped finely
1/2 c of walnuts; crushed
1/2 c of onion (green); chopped finely
1/2 tsp of cayenne
1/2 tsp of coriander (ground)
1 pc of cucumber; peeled and sliced thinly
1 pkg of crackers (Wheatsworth)
Juice from 1 pc of lemon (fresh, not bottled)
Freshly ground pepper (black)
24 pcs of salmon (smoked); sliced into 3×1 inch
1 pc of dill bunch (fresh)
Instructions:
Combine cheese, walnuts, celery, onion, cayenne, coriander, and juice of lemon; mix thoroughly till blended well.
Place one teaspoon of mixture onto an end of salmon strip then sprinkle freshly ground pepper; roll it up like a jellyroll. Do the same to all. Cover plastic then place inside the refrigerator till chilled.
Arrange the crackers or toasted bread on a serving platter. Place one slice of cucumber onto each then place one piece of rolled salmon over. Garnish them with dill.

Kingly Smoked Salmon Recipe
Ingredients:
Salmon (Pacific king); butterflied at tail section
For the Rub:
1/4 c of dill (dried)
1/4 c of sugar (brown)
2 tsps of salt (kosher)
2 tsps of freshly ground pepper (black)
Optional:
1 c of vinegar (cider)
1/4 c of canola oil (or corn oil)
Instructions:
Combine dill, sugar, salt, and freshly ground pepper inside a bowl; mix them well. Open salmon then massage with two-thirds of rub; save remaining one-thirds of rub. Fold back salmon then place inside a (plastic) bag. Place inside refrigerator overnight.
Prepare grill at 180-200 degrees F. Take salmon out and allow to rest for half an hour. Combine saved rub, vinegar, and canola oil inside a saucepan; allow to warm above gentle heat. Set on the side to be used for basting.
Transfer salmon on the grill, skin facing down, don’t place directly on the heat. Grill for 50-60 mins, while basting every ten and thirty mins. Serve at once.

Pasta With Smoked Salmon Recipe
Ingredients:
1-1/2 c of heavy cream
16 oz of asparagus (fresh)
6 oz of salmon (smoked); cut into strips
1 pc of lemon (fresh); zested and juiced
3/4 lb of pasta (fettuccine)
2 Tbsps of butter (unsalted)
Salt & Pepper
Instructions:
Boil cream on a saucepan then let it simmer till reduces into 1-cup. Break asparagus ends then cut spears to pieces; cook them in salted (boiling) water, at about 7 mins till tender then drain well. Cook pasta as stated in its package instructions then drain.
Place back onto the pot then add reduced heavy cream, salmon, asparagus, butter, and zest & juice from lemon; toss them well and season salt and pepper, freshly grated. Serve at once.

Chive Potato Pancakes With Smoked Salmon & Golden Caviar Recipe
Ingredients:
2 lbs of peeled russet; cut to cubes
2 Tbsps of matzo meal (or all-purpose flour)
2 pcs of eggs (separated)
2 tsps of salt (fine)
1/2 tsp of pepper (white)
2/3 c of oil (corn oil)
6 oz of salmon (smoked); sliced thinly
3 oz of caviar (golden)
1 pc of onion (medium); cut to chunks
4 Tbsps of chives (fresh); chopped
Instructions:
Preheat the oven at 325 degrees F. Place two large baking sheets inside to preheat. Place onion and russets inside the processor; process till shredded finely then process till chopped finely.
Strain the mixture then press them firmly to squeeze out the liquid; save the liquid.
Place the mixture on a bowl then add matzo, yolks, salt, pepper, and two tablespoons of chives.
Pour off the clear part of the saved liquid, leaving its paste on the bottom then add the paste onto the bowl. Beat the whites of egg till stiff then fold onto the batter. Mix well.
Heat one-third cup of oil onto two skillets above moderately high heat then drop a tablespoon of batter. Cook the pancakes for 4 mins till bottom becomes browned.
Turn then cook for 3 mins till browned. Transfer on the preheated baking sheets. Do the same to the rest of the batter, add oil onto the skillet if necessary.
Arrange the pancakes onto the platter. Garnish caviar and salmon then sprinkle chives.

Planked Salmon With Grilled Pineapple~ Rhubarb Recipe
Ingredients:
2 pieces of sides salmon (wild, each at 5lbs)
1 cup of juice (pineapple)
1 cup of rhubarb; chopped finely
1 cup of pineapple (fresh); crushed
1/4 piece of pepper (Habanero); chopped finely
For the Dry Rub:
4 Tablespoons of sugar (brown)
4 Tablespoons of salt (kosher)
4 Tablespoons of pepper (black)
4 Tablespoons of dill (fresh)
Instructions:
Combine sugar, salt, pepper, and dill; set on the side. Combine juice, fresh pineapple, Habanero, and rhubarb inside a glass bowl. Gentle rub onto salmon the mixture of sugar. Rub them for five mins and refrigerate for three hrs.
Rinse salmon in (cold) water. Arrange them onto soaked greased (cedar) board, with skin facing down. Place inside a smoker with (alder berry) wood at 225 degrees F.
Smoke them for 2-1/2 hrs, while basting every ten mins with mixture of pineapple.

Ingredients:
4 oz of cream cheese; softened
1/4 c of chopped walnuts
1 Tbsp of chopped chives (fresh)

Instructions:
Combine chives, walnuts, celery, and (cream) cheese inside a glass bowl; stir thoroughly. Add two teaspoons juice from lemon; mix thoroughly. Spread mixture onto each salmon; season pepper and roll like a jellyroll.
Toast the bread then cut to eight rounds, about 2.5 inch. Spread a thin layer of butter then place over one slice of cucumber.
Place salmon over then drizzle the rest of juice on them. Garnish dill and if preferred, include chives.
