Penne Ala Vodka & Smoked Salmon Recipe
Ingredients:
12 oz pf pasta (penne)
2 Tbsps of oil (olive oil)
1 pc of shallot (whole); sliced thinly
4 pcs of whole tomatoes (Roma); seeded then chopped
2/3 c of cream (whipping)
1/8 tsp of nutmeg (ground)
2 Tbsps of chopped dill (dried or 1/2 tsp dried)
1/3 c of vodka
6 oz of salmon (smoked); cut to strips
Pepper (white)
Fresh sprig of dill
Instructions:
Cook the pasta according to package directions; drain. Heat the oil on a pan above moderately low heat. Saute the shallot for 3 mins while stirring occasionally till tender and not browned. Add tomatoes and stir well then cover; let it simmer, about 5 mins.
Add nutmeg, dill, vodka, and cream; let it boil above high heat. Let it boil, about one min. Add the cooked pasta then mix gently till coated well. Take out from the heat then add the salmon; toss gently.
Season pepper then garnish dill.

Mrinal’s Special Yogurt Salmon Recipe
Ingredients:
2 Tbsps of oil (vegetable oil)
4 pcs of cardamom pods
1/2 pc of cinnamon stick
8 pcs of whole peppercorns (black)
8 pcs of cloves (whole)
1 pc of large onions (white); sliced to 1/4-inch thick
1-1/2 c of water
1 tsp of cayenne pepper
1 c of yogurt (low fat)
1 tsp of salt
1 Tbsp of sugar (refined)
1 tsp of turmeric
2 Tbsps of ginger root (fresh); grated
3 lbs of salmon (filleted and deboned); cut to 2-inch pieces
4 pcs of garlic cloves; minced
Instructions:
Heat the oil on a pan above medium-high heat then add cinnamon, cardamom, cloves, and peppercorns.
Once mixture sputters, add ginger and onions; cook till caramelized while stirring occasionally. If the mixture becomes very hot, gradually add little (cold) water.
Reduce the heat into medium. Add water, cayenne, turmeric, garlic, yogurt, sugar, and salt; stir thoroughly. Add salmon then cover; let it simmer above gentle heat till done.

Black Pepper Angel Hair With Smoked Salmon Recipe
Ingredients:
For the Sauce:
4 c of cream (heavy)
1 c of juice (clam)
1 c of wine (white, dry)
6 pcs of garlic cloves (whole); peeled
2 tsps of whole peppercorns (black)
2 Tbsps of dill weed
1 Tbsp of vinegar (champagne)
3/4 c of grated cheese (Parmesan)
16 oz of pasta (angel hair)
2 tsps of salt
Black pepper
For the Topping:
8 oz of salmon (smoked)
8 oz of cream (heavy)
1 c of sour cream (dairy)
4 pcs of dill weed sprigs (fresh)
Instructions:
Place the four cups of cream on a sauce pot; let it simmer gently till reduced into half. Combine (clam) juice, garlic, wine, peppercorns, dill, vinegar, and salt on another pot; let it boil till reduced into half.
Strain the mixture and discard peppercorns and garlic; add the mixture onto the cream then set on the side.
Whip eight ounces of cream till medium peaks; add (sour) cream then whip till blended well. Cook the pasta as stated on its package instructions. Drain then rinse with (cold) water.
Heat the wine/cream sauce till boiling and add the Parmesan; whisk thoroughly till blended well. Add the cooked pasta then toss well till evenly coated.
Divide them between four plates and top 2 ounces of salmon, cream/sour cream sauce, and dill sprig.

Northwest Grilled Salmon Recipe
Ingredients:
1 pc of cold salmon (whole fillet, skin on)
2 Tbsps of melted butter
3 Tbsps of melted honey
1 Tbsp of dill weed
Instructions:
Brush honey with butter on salmon and sprinkle dill. Grill over moderate coals, with skin facing up. Once firm, turn and grill till flaked easily. Serve over greens.

Piquant Salmon Rolls Recipe
Ingredients:
4 oz of cream cheese; softened
1/4 c of chopped walnuts
1 Tbsp of chopped chives (fresh)
1 pc of chopped celery stalk
3 tsps of juice (lemon)
3/8 tsps of cayenne
1/4 tsp of coriander (ground)
8 pcs of salmon (smoked, thin slices)
8 pcs of bread (whole wheat, thin slices)
Butter (unsalted)
8 pcs of cucumber slices (thin)
Freshly ground black pepper
Sprigs of dill (fresh)
Chives
Instructions:
Combine chives, walnuts, celery, and (cream) cheese inside a glass bowl; stir thoroughly. Add two teaspoons juice from lemon; mix thoroughly. Spread mixture onto each salmon; season pepper and roll like a jellyroll.
Toast the bread then cut to eight rounds, about 2.5 inch. Spread a thin layer of butter then place over one slice of cucumber.
Place salmon over then drizzle the rest of juice on them. Garnish dill and if preferred, include chives.

Moist Poached Salmon Recipe
Ingredients:
2 pcs of salmon fillets (8-oz each, or steaks)
Salt
5-3/4 qt of water (or combination of dry white wine)
1/2 tsp of coriander seed (whole)
1 pc of bay leaf
Instructions:
Arrange the fillets on a deep skillet, in one layer. Season salt then add water with wine, till salmon is covered completely. Add (bay) leaf and coriander; let it simmer gently. Lower down the heat then cover; simmer it for 3-4 mins. Turn off the heat then let it stand for ten mins, covered. Serve.

Microwave Salmon Ring Recipe
Ingredients:
15 ozs of salmon (canned); drained and flaked
1 pc of pc of egg; beaten lightly
1 c of bread crumbs
1/4 c of sour cream (or whipping cream)
1/2 tsp of curry (powder)
1 pc of onion (small); chopped finely
1 tsp of salt
1/4 tsp of pepper (black)
1 pc of lemon; juiced and zested
For the sauce:
2 tsps of margarine (unsalted)
2 tsps of flour; sifted
1 c of milk (whole)
3 tsp of chopped dill
Instructions:
Combine salmon, pc of egg, crumbs, sour cream, curry, onion, salt, pepper, lemon juice, and zest; mix them well.
Transfer on a microwave (ring) pan then cover it w/ waxed paper. Cook for 6 mins at a high setting. Let it stand for 5 mins before unmolding.
(Sauce)
Melt the margarine inside the microwave for half a min at a high setting. Add the flour and stir thoroughly; cook for 30-60 secs at a high setting. little by little add milk, while stirring constantly.
Add pepper and dill; cook it at a high setting till thick, stirring the mixture every 1-2 mins.

Moroccan-Style Salmon With Couscous Recipe
Ingredients:
1 pc of onion (small); sliced
2 pcs of garlic cloves; chopped finely
1 Tbsp of oil (olive oil)
28 oz of canned tomatoes (whole peeled)
4 tsps of honey (pure)
1 tsp of lemon zest; grated
3/4 tsp of cumin (ground)
1-1/2 tsps of juice (lemon)
Salt
Pepper (black)
Cayenne
6 pcs of salmon (fillets, 4-6 oz each); thawed if frozen
2 Tbsps of chopped almonds (toasted)
2 Tbsps of coriander (fresh); chopped
3 c of couscous (cooked, or rice)
Instructions:
Saute garlic and onion with oil inside a skillet above moderately high heat till golden. Add tomatoes with the liquid, lemon zest, cumin, and honey; stir thoroughly.Let it simmer for 10-15 mins. Add juice of lemon then season cayenne, salt, & pepper.
Season salt & pepper onto fillets. Broil at 4 to 6 inches away from the heat, about 10 mins for every inch thick. Transfer steak onto the platter and top them with the tomato mixture. Sprinkle coriander and almonds then serve at once with cooked couscous.
