Lazy Salmon Cakes Recipe
Ingredients:
1/2 c of potato (mashed)
1 Tbsp of juice (lemon)
1/2 tsp of dried lemon zest (or orange)
1/2 tsp of dill (dried or 4 Tbsps fresh)
1/2 tsp of dried cilantro (or fresh parsley)
1/4 pc of onion (medium); chopped
7-1/2 oz of canned salmon (skinless, boneless)
1 pc of egg
Instructions:
Combine cooled mashed potato, juice, onion, seasonings, and salmon; blend them well then add the egg and mix thoroughly. Shape to four patties.
Heat pan above moderate heat then spray canola oil on it. Fry them for five mins per side till golden. Serve together with fresh lemon wedges.
