Marinated Salmon Danish Style Recipe
Ingredients:
3 pcs of egg yolks (large)
1/3 pc of asparagus bunch (cooked); chopped roughly
3 oz of juice (lemon)
1 c of oil (olive oil)
Salt & Pepper (to taste)
3 c of beer (canned)
5 lbs of salmon (filleted)
1 c of sugar (refined)
1/2 c of salt
1/2 c of pepper (black)
2 Tbsps of chopped basil
4 Tbsps of saltpeter
Instructions:
(Asparagus Mayonnaise)
Combine yolks, juice, and asparagus inside the processor; process till blended well. Gradually add oil, while blending continuously. Blend till mixed thoroughly. Season salt & pepper.
(Salmon)
Place salmon inside a pan, with skin facing down. Sprinkle salt, pepper, sugar, basil, and saltpeter. Pour over the beer, covering the salmon. Cover and let it marinate inside refrigerator for two weeks.
Drain the salmon and slice very thinly. Arrange onto a lettuce bed then spoon over the asparagus-mayonnaise. Garnish slices of lemon and tomato.
