Mrinal’s Special Yogurt Salmon Recipe
Ingredients:
2 Tbsps of oil (vegetable oil)
4 pcs of cardamom pods
1/2 pc of cinnamon stick
8 pcs of whole peppercorns (black)
8 pcs of cloves (whole)
1 pc of large onions (white); sliced to 1/4-inch thick
1-1/2 c of water
1 tsp of cayenne pepper
1 c of yogurt (low fat)
1 tsp of salt
1 Tbsp of sugar (refined)
1 tsp of turmeric
2 Tbsps of ginger root (fresh); grated
3 lbs of salmon (filleted and deboned); cut to 2-inch pieces
4 pcs of garlic cloves; minced
Instructions:
Heat the oil on a pan above medium-high heat then add cinnamon, cardamom, cloves, and peppercorns.
Once mixture sputters, add ginger and onions; cook till caramelized while stirring occasionally. If the mixture becomes very hot, gradually add little (cold) water.
Reduce the heat into medium. Add water, cayenne, turmeric, garlic, yogurt, sugar, and salt; stir thoroughly. Add salmon then cover; let it simmer above gentle heat till done.
