Nanaimo Salmon & Mushroom Kebabs Recipe
Ingredients:
2 lbs of salmon (fresh); cubed to 1 inch
1/2 c of oil (salad)
3 Tbsps of juice (lemon)
36 pcs of mushrooms (large); stemmed and sliced
1/2 c of butter (unsalted)
2 Tbsps of breadcrumbs (fine)
1 pc of lemon (fresh); cut to wedges
1/8 tsp of salt
1/8 tsp of pepper
1/8 tsp of parsley
Parsley (fresh, for garnish)
Salt & Pepper (to taste)
Instructions:
Preheat the oven, 450 degrees F. Combine (salad) oil, juice, parsley, salt, & pepper inside a (glass) bowl; mix thoroughly. Add the salmon then place inside the refrigerator; marinate for one hr. Drain the salmon on a colander for ten mins.
Melt the butter on a pan then add mushrooms and salmon; toss them well. Secure onto skewers, alternating with mushrooms and salmon. Sprinkle lightly with crumbs till evenly distributed. Season salt & pepper.
Arrange the kebabs onto the rack on baking pan. Bake inside the oven 450 degrees F for fifteen mins or till done. Take them out from the oven then sprinkle chopped parsley and serve immediately with wedges of lemon.
